Pesto Sauce

Wine Pairing: Sauvignon Blanc, Vermentino, or Catarratto
Ingredients
40g Basil Leaves
Kosher Salt
1 Garlic Clove
3 tbsp. (24g) Pine Nuts
1/4 cup Freshly Grated Parmesan Cheese
1/2 cup Extra Virgin Olive Oil
2 tbsp. Lemon Juice
Instructions
Add in half the basil leaves
Add a pinch of kosher salt
Add in 2nd half of the basil leaves
Remove the basil leaves and set them aside
Add 1 clove of garlic
Add 3 tbsp. (24g) pine nuts
Add the basil back in
Add 1/4 cup of freshly grated parmesan cheese
Slowly add in 1/2 cup of extra virgin olive oil
Add 2 tbsp. of lemon juice (enhances the overall flavor)
The pesto sauce can be refrigerated for up to 7 days
Best served with pasta or with pasta and a sliced roasted or grilled chicken breast
