Baked Doughnuts

Ingredients
2 cups Cake or Pastry Flour
3/4 cup Sugar
2 tsp. Baking Powder
1/4 tsp. Ground Nutmeg
1 tsp. Salt
3/4 cup Buttermilk
2 Eggs
2 tbsp. (28g) Melted Butter
Instructions
Preheat oven to 425 °F
Sift flour in a bowl
Add the sugar, baking powder, nutmeg and salt
Whisk the dry ingredients together
Add the buttermilk, eggs and butter
Whisk then load the pipping bag
Butter the doughnut tray or use nonstick spray
Fill the doughnut tray to 2/3
Bake for 8 minutes
Remove from oven and let cool in the doughnut tray for 5 minutes
Take the doughnuts out and place them on a cooling rack
You can now eat the doughnuts as is or add a topping like chocolate, icing sugar and/or sugar cinnamon
Chocolate Glaze (Version 1)
1/2 cup Chocolate Chips
2 tbsp. (28g) Butter
2 tbsp. Corn Syrup
1 tsp. Hot Water
Add the chocolate chips, butter and corn syrup into a bowl
Microwave for 30 seconds
Add 1 tsp. of hot water and whisk
Dip the doughnuts brown side down (chocolate will not stick to the white side very well)
Rainbow sprinkles optional
Chocolate Glaze (Version 2)
1½ cups (150g) Icing Sugar
4 tbsp. (27g) Cocoa Powder
2 tbsp. Milk or Water
2 tsp. Vanilla Extract
1 tbsp. Corn Syrup
Sift together the icing sugar and cocoa powder in a medium bowl
Slowly stir in the milk and vanilla extract, a little bit at a time until smooth
Rainbow sprinkles optional
Icing Sugar
1/2 cup Icing Sugar in a plastic bag
Melted Butter
Brush each doughnut with melted butter
Place a doughnut into a plastic bag with 1/2 cup icing sugar
Shake the bag until the entire doughnut is covered
Cinnamon Sugar
2 tbsp. Sugar
1 tbsp. Ground Cinnamon
Melted Butter
Stir the sugar and cinnamon together in a bowl
Brush each doughnut with melted butter
Place a doughnut in the bowl and coat with the cinnamon-sugar mixture
