Balsamic Vinegar and Red Onion Potatoes

Ingredients
1 tbsp. Butter
1/2 Red Medium Onion Sliced
2 Large Garlic Cloves Minced
1 lb. Baby Potatoes
1/2 tsp. Salt
Fresh Ground Pepper
2 tbsp. Balsamic Vinegar
Green onion (scallion) as a garnish
Instructions
Preheat a skillet on medium-high heat
Add 1 tbsp. butter
Add 2 minced large garlic cloves
Add 1/2 sliced red medium onion
Stir until the onion is caramelized
Add in the 1 lb. of baby potatoes
Add 1/2 tsp. salt
Add some fresh ground pepper
Add in 2 tbsp. of balsamic vinegar
Stir for about a minute then remove from the heat
Add strings of green onions (scallions) as a garnish
